The closing couplet of that sonnet accompanies every bottle.

White

USCA Sonnet 5Bornova Misketi

“But flowers distilled, though they with winter meet,
Leese but their show; their substance still lives sweet.”

Pale straw in colour, clear.

On the nose, intense rose and honey open the wine, followed by honeysuckle.

On the palate these aromas turn balanced and rich, with touches of lime, citrus and nectar.

USCA Sonnet 99Viognier

“More flowers I noted, yet I none could see
But sweet or colour it had stol’n from thee.”

Straw yellow in colour.

On the nose, delicate florals of jasmine and lily come to the fore.

On the palate, pineapple, mango and banana meet a lively acidity for a balanced, easy character.

USCA Sonnet 116Chardonnay & Viognier

“If this be error and upon me proved,
I never writ, nor no man ever loved.”

Pale gold in colour.

On the nose, delicate florals of acacia blossom, lily and jasmine are enriched by peach, apricot and tropical pineapple and mango.

On the palate, citrus notes are clearly present.

Rested five months in French oak, it carries integrated notes of vanilla, toasted bread and roasted hazelnut.

Rosé

USCA Sonnet 8Öküzgözü Blush

“Whose speechless song, being many, seeming one,
Sings this to thee: ‘Thou single wilt prove none.’”

Salmon pink in colour, with rosy glints.

Alongside a lively acidity, the nose opens with red fruits — cranberry, rosehip and wild strawberry — and the palate continues with the same profile.

USCA Sonnet 73Syrah · Claret style

“This thou perceiv’st, which makes thy love more strong,
To love that well which thou must leave ere long.”

Deep pink in colour, bright with ruby glints.

On the nose, an aromatic frame of red fruits — sour cherry and raspberry — gives way to sweet spice of cinnamon and clove and floral tea-flower notes.

Made in the style the French call “Claret,” with a 24-hour skin maceration.

USCA Sonnet 58Cabernet Sauvignon & Öküzgözü

“I am to wait, though waiting so be hell,
Not blame your pleasure, be it ill or well.”

Ruby in colour, bright.

On the nose, lively forest-fruit aromas stand out.

On the palate, a firm acidity carries the red-fruit character through.

It offers a soft, rounded finish.

USCA Sonnet 66Cabernet Sauvignon & Merlot & Syrah

“Tired with all these, from these would I be gone,
Save that, to die, I leave my love alone.”

Clear, bright ruby in colour.

On the nose, lively red forest fruits come forward.

On the palate, spice of clove and black pepper builds a rich, powerful frame with red and black forest fruits.

The finish carries damson plum tones, with a round, lively, velvety texture.

Rested six months in used oak.

“O, learn to read what silent love hath writ:
To hear with eyes belongs to love’s fine wit.”

Deep red in colour, with violet glints.

On the nose, violet, spice and a light smoke stand out.

On the palate, red and black forest fruits turn powerful and full with touches of spice.

Rested twelve months in French oak.

Bright, deep red in colour, with ruby reflections.

On the nose, violet, vanilla, smoke and spice come to the fore.

On the palate, fresh black forest fruits are enriched by touches of coffee and chocolate.

It offers a balanced, elegant and long finish.

Rested eighteen months in 80% French, 20% American oak.

On the nose, smoke, spice and dark-chocolate notes married to French oak lead the way, deepening over time with black forest fruits, coffee and violet.

It has a long, lasting finish.
